Bluenose Food Principles
Why we eat
When I first started writing on this blog I wasn’t really sure the direction I wanted to take it in. After a while I began to consider why I enjoy cooking and why people in my home province enjoy cooking. I came to realise that it’s not about having the cheesiest food or the most precisely crafted food, it was about much more than that. Food is both an integral part of our shared culture and values, dating back all the way to the Aboriginals and the first European settlers. It’s in our blood as it were.
So I have tried to distil these culture and values into its key components. As I did so I began to realise that these components, or principles, were are also an integral part of who I am as a cook. The results of all this is what I’m calling ‘Bluenose Food Principles’, a rough set of guidelines to cooking like a Nova Scotian.
